BUTTERSCOTCH CONFETTI SQUARES

These old school Holiday treats aren’t exactly blog-esque but they’re nostalgic and a hit at any house party or office potluck. If you’re not ready to give up the Holidays quite yet, make these colourful treats for NYE!If you’re like me, I reach for these any time I see them out & about and was curious how to make them. Turns out they contain 4 ingredients & are super easy to make. This of course means they’re NOT healthy, but tis the season. Cute & colourful to bring in the New Year…

Butterscotch Confetti Squares
You will need:

1/2 cup butter
*1 cup peanut butter
*250 gram bag butterscotch chips
*250 gram bag mini fruit flavoured marshmallows (multi-coloured)
9 x 12 inch baking dish

*I improvised these slightly, see directions.

Directions:

In a medium saucepan, combine butter, peanut butter & butterscotch chips. You can play a little with the amount of peanut butter and butterscotch depending which flavour you prefer. I used more butterscotch (almost the entire 300g bag) and a little less peanut butter (scant 1 cup.) On medium heat, stir continuously until melted and completely blended together. Set aside and let cool for 45 minutes- 1 hour*. Combine marshmallows with mixture and stir together. Pour mixture into baking dish lined with parchment paper. Place in refrigerator to set for 2 hours. Cut into squares & enjoy!

* This step is important to ensure the marshmallows are evenly distributed throughout and the mixture doesn’t set at the bottom of the dish. I allowed 1 hour but really you want the mixture to cool and begin to thicken before stirring in the marshmallows.
